Lemon Blueberry Bread with a CBD Glaze

This is a huge hit in our office and homes! 

Batter Ingredients:

  • ⅓ C Melted Butter
  • 1 C White Sugar
  • 3 Tbsp Lemon Juice
  • 2 Large Eggs
  • 1 ½ C Flour
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • ½ C Milk
  • 2 Tbsp Lemon Zest, Grated
  • 1 C Blueberries, Frozen or Fresh

Glaze Ingredients:


Instructions:

  1. Preheat oven to 350℉, lightly grease a bread pan.
  2. In a large mixing bowl, beat butter, sugar, lemon juice, and eggs together.
  3. In a medium mixing bowl whisk together flour, baking powder, and salt.
  4. Add the flour mixture and milk to the egg mixture, alternating between the flour and milk until both are combined. 
  5. Fold in lemon zest and blueberries.
  6. Pour batter into the bread pan and bake for 60-70 minutes.
  7. Check with a toothpick to make sure it’s done. 
  8. Let the bread cool for 10 minutes or so. 

While the bread cools, make the glaze. 

Whisk together the lemon juice, sugar, and CBD powder. (It will be clumpy at first, once you start whisking the sugar will break down into the lemon juice.) You can also double or triple the ingredients if you want more.


Remove bread from pan, set on cooling rack or plate, then drizzle glaze over it.

P.S, I have made this with Gluten-Free All Purpose Flour and it is still freaking fantastic! It wasn't dry at all, but that could have been the extra glaze we used, regardless, it was still delicious!
